Bahama Burger Harvest Bowl
Ingredients
- 1/2 cup Wild Rice Blend
- 1 cup Chicken Broth
- 3 cups 1″ butternut squash cubes
- 3 TBSP extra virgin olive oil, divided
- 1/8 tsp. garlic powder
- 1/8 tsp. chili powder
- 1/8 tsp. cinnamon
- Salt and pepper to taste
- 2 cooked Bahama Burgers , Cubed
- 9 ozs thinly shredded brussel sprouts
- 1 large Apple, chopped
- 3 ozs. white Cheddar cheese cut into cubes
- 1/3 cup slice Almonds or pepitas
- 1/3 cup dried cranberries.
For Fig Balsamic Vinaigrette:
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 small clove garlic , minced
- 2 TBSP fig jelly
- Salt and pepper to taste.
NOTE: Check all ingredients for any allergy issues. Soy & Tamari can be substituted. Cheeses should be soy & dairy free. Gluten Free ingredients should be substituted for gluten.

Directions
- Add wild rice blend and chicken broth to a small saucepan then bring to a simmer, place lid on top, lower heat and simmer for 45-50 minutes until rice blend is tender. Add more liquid if needed. Fluff with fork and set aside.
- Preheat the oven to 400 F. Line a sheet pan with parchment paper. In a bowl place Butternut Squash ,11/2 TBSP olive oil, garlic powder, chili powder, cinnamon , salt and pepper . Mix well and place on parchment paper. roast for 20 minutes. Cool off slightly.
- Meanwhile, line another sheet pan with parchment paper and add Brussel sprouts. Add remaining olive oil, salt and pepper; toss with a spatula.
- Bake for 10-12 minutes or until tender and lightly browned. Set aside to cool slightly.
- Saute off 2 Bahama Burgers and dice after cooking.
- In a large bowl mix all ingredients together while drizzling the Fig Balsamic Vinaigrette on top and toss to coat and serve, or you can make a layered bowl by putting the rice in the bottom of the serving bowl and then layering the rest of ingredients on top. Finish with Cranberries and nuts.
