Vegan Green Bean Casserole with Bahama Burger
Ingredients
- 2 1/2 lbs Frozen Green Beans or 9 cups
- 1 Tbsp Olive oil
- 1 tsp minced Garlic
- 2 1/2 cups Cremini Mushrooms Sliced
- 1 Tbsp. Tamari or Soy Sauce
- 14 ozs. Unsweetened Coconut Milk full fat
- 1 Tbsp Cornstarch
- 5 each Bahama Burgers cooked and cubed
- 1 1/2 cups shredded Cheddar cheese
- 6 ozs. Crispy Fried Onions
NOTE: Check all ingredients for any allergy issues. Soy & Tamari can be substituted. Cheeses should be soy & dairy free. Gluten Free ingredients should be substituted for gluten.

Directions
- Bring a pot of water to a boil and then add in the green beans. Cook for 3 minutes, drain and place in a bowl. Set aside.
- Preheat the oven to 350F
- In a non-stick pan saute off 5 Bahama Burgers. Once cooked, cut into 1/2″ pieces and add to the bowl with the green beans.
- Add olive oil and minced garlic to a frying pan along with sliced mushrooms and soy sauce. Saute until the mushrooms are soft.
- Add Coconut milk and heat with mushrooms until it reaches a simmer.
- Mix the cornstarch with a little cold water into a paste and add to the mixture, stirring constantly until it thickens.
- Add to your bowl with the green beans. Add shredded cheddar cheese , mix well.
- Pour into a sprayed 9×12 baking dish, top with crispy onions. cover with foil and bake for 20 minutes. Uncover and let onions brown. You are ready to serve!
